RED BANK RAW NATURAL HONEY

(**OUT OF STOCK**) We gave our autumn crop of Local honey a special name for the area it comes from: Red Bank, New Jersey. It is produced in small quantities because we leave enough on the hives to assure that the bees have sufficient stores to survive the winter.

Unlike other honeys, our natural Red Bank Raw is processed without any heat and is unfiltered, so it contains bits of honeycomb and tends to crystallize sooner (crystallization is a natural physical characteristic of honey). Red Bank Raw has a distinctive robust flavor that makes it one of our favorites.

SPRING WILDFLOWER NATURAL HONEY

We produce two different kinds of natural Wildflower Honey. The spring variety is made from wildflower nectar from early in the year. SUMMER WILDFLOWER NATURAL HONEY

Our natural Summer Wildflower Honey is a mixture of both the spring and summer nectars the bees collected at the time of harvest. The color and flavor varies throughout during the season -- from amber to dark amber. With mild floral undertones, Summer Wildflower honey is delicious in fruit and vegetable salad dressings, and excellent in baked goods. (Nectar source: New Jersey)

TUPELO NATURAL HONEY

Produced from tupelo gum trees, which grow in the river swamps of northwest Florida, this precious nectar is harvested by bees fanning out along the blossom-laden river valley. Our real Tupelo Honey is light golden amber with a distinctive smooth and complex herbal flavor. Smooth in texture, Tupelo Honey is a powerful sweetener, making it an excellent choice for baked goods. It is also the only honey that never granulates.
